It is also requirement of your local council for all those who operate a food outlet. Applicants will need to register with their local council after successful completion of this course.

This unit describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food within a range of service industry operations. It requires the ability to follow predetermined procedures as outlined in an organisation food safety program.

WHO DOES THIS COURSE APPLY TO?

This applies to hospitality, commercial catering and retail venues where food is stored, prepared, displayed, served and disposed of.

All operating venues of both permanent or temporary residence as a kitchen or smaller food preparation require this unit of competency by the Supervisor.

These include: Restaurants, cafes, clubs, hotels, attractions, events and conference venues, fast food restaurants, retail food outlets such as sandwich shops and food court outlets.

Supervisors/Frontline operational personnel who work in a diverse range of roles such as cooks, chefs, catering staff and kitchen hands, food and beverage attendants, cafe and fast food outlet cooking crew and sales people, and owner–operators of small business catering operations or retail food outlets require this unit competency.

BACKGROUND

Food safety is nationally legislated by the Food Standards Australia New Zealand Act 1991 which provides for the operation of a statutory authority known as Food Standards Australia New Zealand. The Australia New Zealand Food Standards Code (the Code) developed by this authority contains an individual standard for food safety practices.

Safe food handling practices are based on policies and procedures outlined in an organisation food safety program. The program and its procedures would normally be based on the hazard analysis and critical control points (HACCP) method but this unit can apply to other food safety systems.

To implement a food safety program, please contct your local council for local government requirements.

This unit of competency complies with the legislative requirements for food safety and safe food handling practices as outlined in the Code.

This course satisfies legislation where licensable food businesses are required to have a Food Safety Supervisor (e.g., Qld Food Act 2006). Legislation may differ between states and territories.

PRE-REQUISITES

Individuals must have access to a fully equipped industry-realistic food preparation environment OR are requiring SITXFSA201 or equivalent as a condition of the application process for a food licence.

Individuals must have completed Food Handlers SITXFSA101 Use hygienic practices for food safety before completing this course.

Delivery Options

This course is delivered on campus by a certified trainer. Public classes run monthly in the Townsville campus only.

Or you can choose the popular online option, and complete at your own pace via the Axiom College student portal. You will be set up with your own profile and student logins to commence at any time.

RECOGNITION OF PRIOR LEARNING (RPL)

RPL is an opportunity for you to have previously acquired skills formally recognised. RPL skills may have been acquired through practical work, life experience or formal education. In order to have these skills recognised, you will need to be able to clearly define these skills and provide evidence of your experience and ability against criteria specific to the unit/s you wish to RPL. This evidence may take the form of a demonstration of skills and/ or samples of previous work.

THE ASSESSMENT PROCESS

Assessment will only be carried out for accredited training where a qualification, statement of attainment or licence may be issued.

Assessment will be carried out on the submission of completed unit/s of competency or under the RPL processes to ascertain whether the participant can be deemed ‘competent’.

Assessment evidence submitted by the student will be marked and feedback given advising whether the evidence is satisfactory (successful) or unsatisfactory (unsuccessful). Additional feedback may be provided as required. All evidence is retained by Axiom College.

SUBMITTING COMPLETED ASSESSMENTS

Axiom College has implemented an automated system for receiving Assessments from students who do not complete their work in class or upload them via their student portal.

This is an electronic method that requires students to email all evidence. If documents are emailed with an incorrect subject line, there may be a delay in them being formally received and acknowledged.  If this happens, an email will be sent back to the student requesting they resubmit with the correct information in the subject line of the email. Assessments received correctly will have confirmation emailed to the student.

The Student Support Centre aims to deliver an integrated professional service to all students and employers. This is achieved by providing quality customer service to enhance the overall learning experience.
